Smoky Chicken Tomato Bisque Recipe

Ingredients:
2 cups cooked chicken, shredded
1 can (28 oz) crushed tomatoes
1 medium onion, diced
2 cloves garlic, minced
2 cups chicken broth
1 cup heavy cream
1 tablespoon smoked paprika
1 teaspoon dried oregano
Salt and pepper to taste
2 tablespoons olive oil
Fresh basil for garnish (optional)
Instructions:
In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes.
Stir in the minced garlic and cook for another minute, until fragrant.
Add the crushed tomatoes, chicken broth, smoked paprika, oregano, salt, and pepper. Bring the mixture to a simmer.
Add the shredded chicken to the pot and let it cook for about 10 minutes, allowing the flavors to meld.
Reduce the heat to low and stir in the heavy cream. Continue to heat the bisque, but do not bring it to a boil.
Once heated through, taste and adjust seasoning if necessary.
