Ingredients:
1 lb Costco rotisserie chicken, shredded
1 cup bell peppers (any color), diced
1 cup onion, diced
1/2 cup Greek yogurt
2 cloves garlic, minced
1 tsp cumin
1 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
Skewers (soaked in water if wooden)
Olive oil for frying
Cooking Instructions:
Prepare the Marinade: In a mixing bowl, combine Greek yogurt, minced garlic, cumin, paprika, salt, and black pepper. Mix well.
Combine Ingredients: Add the shredded chicken, diced bell peppers, and onions to the marinade. Stir until all ingredients are evenly coated. Let it marinate for about 10 minutes.
Assemble Skewers: Thread the marinated chicken and vegetable mixture onto the skewers, alternating between chicken and vegetables.
Heat Oil: In a large skillet, heat olive oil over medium heat.
Fry the Kebabs: Once the oil is hot, carefully place the skewers in the skillet. Fry for about 3-4 minutes on each side or until the chicken is heated through and the vegetables are slightly charred.
