The El Cortez Sandwich the Mule OKC Prep Time: 15 minutes Cook Time: 10 minutes Total Time: 25 minutes Servings: 2 Ingredients: 2 slices of sourdough bread 1/2 cup refried beans 1/2 avocado, sliced 1/2 cup shredded lettuce 1/4 cup diced tomatoes 1/4 cup pickled jalapeños 2 slices of pepper jack cheese 2 tablespoons mayonnaise 1 teaspoon lime juice Salt and pepper to taste Olive oil for grilling Cooking Instructions: Prepare the Sauce: In a small bowl, mix the mayonnaise and lime juice. Season with salt and pepper to taste. Set aside. Assemble the Sandwich: On one slice of sourdough bread, spread a layer of refried beans. Top with avocado slices, shredded lettuce, diced tomatoes, pickled jalapeños, and a slice of pepper jack cheese. Spread the prepared sauce on the other slice of bread, then place it on top of the sandwich. Grill the Sandwich: Heat a skillet over medium heat and add a drizzle of olive oil. Once hot, carefully place the sandwich in the skillet. Grill for about 3-5 minutes on each side, or until the bread is golden brown and the cheese has melted.
