Ingredients:
4 medium potatoes, peeled and sliced
1 onion, thinly sliced
2 carrots, sliced
1 bell pepper, sliced
2 cups cooked meat (beef, chicken, or pork), shredded
1 cup vegetable or chicken broth
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions:
Preheat the oven to 350°F (175°C).
In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sauté until they become translucent.
Layer the sliced potatoes in a greased baking dish, followed by the carrots, bell pepper, and cooked meat.
Sprinkle the sautéed onions on top of the meat and vegetables.
In a bowl, mix the broth, garlic powder, paprika, salt, and pepper. Pour this mixture evenly over the layered ingredients in the baking dish.
Cover the dish with aluminum foil and bake in the preheated oven for about 45 minutes.
After 45 minutes, remove the foil and bake for an additional 15 minutes to allow the top to crisp up slightly.
Once cooked, remove from the oven and let it cool for a few minutes before serving. Garnish with fresh parsley if desired.
