Red Currant Polish Recipe

Ingredients:
2 cups fresh red currants, rinsed and stemmed
1 cup sugar
1 cup water
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 tablespoon cornstarch (optional, for thickening)
1 tablespoon water (for cornstarch mixture)
Instructions:
Prepare the Currants: In a medium saucepan, combine the red currants, sugar, 1 cup of water, lemon juice, and vanilla extract.
Cook the Mixture: Place the saucepan over medium heat and bring the mixture to a gentle boil. Stir occasionally until the sugar is fully dissolved and the currants start to break down (about 5-10 minutes).
Thicken the Sauce (Optional): If you prefer a thicker sauce, mix the cornstarch with 1 tablespoon of water in a small bowl to create a slurry. Gradually add the slurry to the saucepan, stirring constantly until the sauce thickens (about 1-2 minutes).
Cool and Serve: Remove the saucepan from heat and let it cool slightly. You can serve the red currant sauce warm or chilled. It pairs well with pancakes, waffles, yogurt, or as a topping for desserts.
Store Leftovers: If you have any leftovers, store them in an airtight container in the refrigerator for up to a week.
